This is a play on the Jalapeño Cheddar Garlic flour tortillas that sell out in record time every time I make them, but with different peppers. Hungarian Hot Wax, Serrano (from friend and long time customer and a few habaneros and Carolina Reapers.

Tillamook extra sharp cheddar comes through so well, the garlic is garlicky, and the texture is perfect. Thicker than our standard tortillas, for a hearty bite in every bite.

I've got a little treat for you!
Jessica and I had the pleasure of taking an amazing trip to Greece and Morocco in March, and now I get to share a little with you!

I'm working on a reel with tons of pictures, but Instagram is being temperamental this morning, so that will have to wait.

I brought back freshly picked Medjool dates from Morocco that we found in the middle of a crazy market. It was off the beaten path, and definitely not one the tourists frequented, but we found it! All I wanted were dates, but I was *this close* to being coerced into buying a tuktuk, shoes made from the finest camel, and a bicycle.

And when we were in Greece, we found a 3rd generation family owned olive orchard and mill, and after doing a tasting, and meeting the owner and his daughter, we were sold. I decided I needed to bring home a case of delicious extra virgin. It took a month, a stay in customs, and some super awesome tariff charges, but it finally arrived!

And because dates and olive oil could always use a touch of sweetness, I picked up some amazing Mesquite Blossom honey from right here in Arizona.

And to give you a taste of our travels, I mixed all 3 in a flour tortilla, made with mostly Heritage Grain White Sonora, grown and stone milled right here in Arizona by

You could call this tortilla the "World Traveler". Or maybe "Sweet and Sandy Greek". I don't know, maybe I'll stick with Sweet Memories.

The Hot and Cheesy Garlic Squeezy!
A lively pepper blend from my farmer buddy Bill up in Sunflower, including Hungarian Hot Wax peppers, habaneros, and a few Serrano peppers from that LIT ME UP alongside Tillamook extra sharp cheddar, and garlic. It's pretty much the Jalapeño Cheddar Garlic, but different peppers. You'll like the way it tastes, I guarantee it. (First person to tell me who makes that guarantee gets a free pack)

Really Really Flat Zucchini Bread!
Organically grown zucchini, organic brown sugar, butter, cinnamon and vanilla in a delicious flour tortilla. This is one of my favorite ones to eat with just a little butter and a sprinkle of salt.

And for my corny folks...
Cilantro lime blue corn!
It's been a hot minute since I've made this one, so I think it's time. Organic cilantro, organic lime juice, and blue corn that turns purple under the acidic influence of the lime juice. It's delicious. It's beautiful. It's purple.

And I'm working on a little something something to commemorate the trip my wife and I took to Greece and Morocco. I brought back a few gallons of amazing Greek olive oil, and a bunch of Moroccan dates, and I think it's fitting that I share them with you! Stay tuned on that one.

Several dozen of the coolest bakers and chefs in the valley came together under the masterful coordination of and to donate 3-4 dozen pastries each. You buy a ticket, and fill your box with a dozen of whatever you desire. And the money? 100% gets donated to the charity of choice! This month was, who provides support and services to LGBT youth in Arizona.

I believe this is the 4th round of Bake and Take, and I'm honored to be among some incredible bakers. We brought packs of our FLATKNOT Cheesy Garlic Knot tortillas, and made a delicious green chile blue corn bread with Oaxaca cheese, and a Mole Negro honey butter to top them.

I appreciate the love and interest! BBT has been at the for 13 years now, 5 under Ben (the chef that started the company) and 8 under me. I found that consistency gave us the best shot at building a solid, reliable customer base. And it works. We've gone from 1,000 tortillas a week 8 years ago to 15-18k now. We cook and deliver M-W for them, Thursday is for our local AJ folks, and Friday is cooking for the Gilbert Farmers Market on Saturday morning. I run 6 days a week to fill your belly.

Quesadillas 3 ways for National Cheese Day!

The kitchen is a magical place. You take a little of this, a little of that, making sure it's the highest quality this and that you can get your hands on. Bonus if it's made by people up the road from you. Double bonus when it's made by *good* people. You put it all together, let time do its thing, maybe a pass through a 90 year old machine, touched by human hands dozens of times through the process.

And at the end of the week, the creation from my kitchen ends up on your dinner table to nourish you. To perhaps bring back a memory, of a time or place, or if you're really lucky, a person who is no longer with you.

Food is more than calories. It's our connection to each other, to our past, and if we do it right, our future.

The Porcupine Project is something that runs year round, but sometimes I forget to talk about it.

In a nutshell, people are hungry, we make food, seems like a nice pairing. And with the holidays coming up, and all the financial stress straining the budget even more, it seems like a good time to send out a reminder.

Thursdays in our AJ store front, any Saturday at the Gilbert Farmers Market, even online for pre-order. If you're in person, just mention a porcupine. It's like a code word. You can ask about the porcupine tortillas. You can say you saw porcupine on the drive-in in the morning. You can mention how your dog got slapped in the face by a porcupine one time because they're such little pricks. Either way, we will get the memo. And your tortillas are on us.

Obviously we ask that you don't abuse the system. But for the 5 years we've been doing it, nobody has done so. My preference is that it's used for traditional tortillas and not specialties.

Other than that, let us know if we can help. I know a pack of tortillas doesn't pay the bills, and it doesn't feed your family for a week, but tacos and fajitas are a nice way to stretch a piece of protein, or get some extra calories in the diet.

If you wish to use it for pre-order, there is a $0.50 charge because my system makes me charge something to make the order go through. But just put in the notes what you would like us to put in your bag and it'll be bagged up just like everybody else's. No means testing. No awkwardness. Just doing what we can to help out.
