Ingredients
Seasoning Blend
2 tsp paprika
1 tsp dried parsley
2 tsp dried thyme
1 tsp garlic powder
2 tosp brown sugar
1/2 tsp ground black pepper
1/2 tsp sea salt
2 large chicken breasts, cut in half
200g rice
480 ml chicken stock
1/2 lemons
Chopped Parsley
Crispy onions
Method
Mix all seasoning ingredients together. Reserve 2 tbsp for the chicken and keep the rest for the rice. Coat the chicken well in its seasoning.
Heat a little olive oil in a large pan over medium-high heat. Sear the chicken for around 5 minutes per side until beautifully golden. Remove and set aside.
Reduce the heat and add a splash more oil if needed. Stir in the rice and remaining seasoning, letting it toast for 1-2 minutes.
Pour in the lemon juice and chicken stock. Return the chicken to the pan, nestling it into the rice.
Cover and simmer for 20-25 minutes until the rice has absorbed all the liquid.
Turn off the heat and leave to rest for 5-10 minutes. Fluff the rice, scatter over parsley and crispy onions, then serve.

Ingredients
2 chicken breasts, sliced into strips
75g plain flour
2 tbsp olive oil
50g butter
8 cloves of garlic, crushed
250ml chicken stock
100ml double cream
30g Parmesan, finely grated
Small bunch of parsley, finely chopped
Method
Start by frying the chicken in a little oil until it’s lightly golden on the outside.
Turn the heat down, melt in the butter, then add the garlic and let it cook until your kitchen smells unreal.
Pour in the stock and let everything simmer away for about 10 minutes.
Stir through the cream and cheese until the sauce turns rich, silky, and thick enough to coat the chicken perfectly.
Finish with fresh parsley and serve while it’s hot.

Ingredients
400g chicken thighs
250g basmati rice, rinsed
500ml chicken stock
100g fat free natural yoghurt
60g tikka masala paste
2 tbsp curry powder
Juice of half a lemon
1 carrot, roughly chopped
1 onion, roughly chopped
2 garlic cloves
Method
Mix the chicken thighs with yoghurt, tikka paste, curry powder, garlic, lemon juice, salt and pepper until fully coated.
Heat oil in a cast iron pan and cook the chicken for 3–4 minutes on each side until golden, then remove. In the same pan, cook the onion and carrots until soft, then stir through the rice and extra curry paste for 1–2 minutes.
Pour in the chicken stock, stir well, then place the chicken back on top. Brush with extra tikka paste, cover tightly and bake at 180°C for 15–20 minutes until the rice is fluffy and the liquid has absorbed.
Top with fresh coriander, red chilli and crushed poppadoms for extra crunch.

1 knob of butter
400g mushrooms, halved
2 red onions, finely chopped

3 boneless, skinless chicken breasts, cut into bite-sized pieces
300ml chicken stock
1 tbsp tomato purée
1 tbsp wholegrain mustard
1 tbsp smoked paprika
250ml soured cream
handful of fresh parsley, finely chopped
Method
Heat olive oil + butter in a large pan. Sauté mushrooms, onions, and garlic for 3-4 mins until golden. Remove and set aside.
Add diced chicken, cook 6-7 mins until golden. Stir in chicken stock, tomato purée, mustard, smoked paprika, salt & pepper.
Return mushrooms and onions. Lower heat, stir in soured cream and fresh herbs. Simmer 8-10 mins until thick and creamy
Serve with pasta, mash, rice, or bread to soak up every drop.

Slow-braised short ribs, deep flavour, melt-in-your-mouth texture, and a sauce you’ll be scraping off the plate.

Ingredients
2 tbsp be vegetable oil
1 ½ kg beef short ribs
2 large onion, sliced
4 cm ginger, coarsely grated
4 garlic cloves, finely chopped
2 tsp Chinese five spice powder
2 tbsp soy sauce, plus more to taste
125 ml hoisin sauce
1 tbsp light brown sugar
1 litre chicken stock
1 cinnamon stick
4 star anise
fresh coriander, finely chopped
red chillies, finely sliced
Method
Oven to 160°C. Heat a little oil in a heavy pot.
Brown the ribs well on all sides. Set them aside.
Turn the heat down. Cook onion, garlic and ginger until soft.
Add five spice, then pour in soy, hoisin, a bit of sugar and stock. Drop in a cinnamon stick and star anise. Let it come to a gentle simmer.
Return the ribs with their juices. Lay baking paper directly on top, then cover with a lid.
Into the oven for 2.5–3 hours, until the meat is tender and falling off the bone.
Lift the ribs out. Skim the fat from the sauce, then simmer it on the stove until slightly thickened.
Serve with rice, spoon over the sauce, finish with coriander and fresh chilli.
