Craving something flavorful and easy to make? This Chicken Fajita Style Pasta combines the flavours of fajitas with the comforting goodness of pasta. Perfect for a quick weeknight dinner!

Ingredients:
* 2 tbsp olive oil
* 2 chicken breasts, cooked and shredded
* 1 red pepper, thinly sliced
* 1 yellow pepper, thinly sliced
* 1 red onion, sliced
* 2 cloves garlic, crushed and chopped
* 1 tbsp mild chili powder
* 1 tbsp smoked paprika
* 1/2 tbsp oregano
* 1/2 tbsp cumin
* 1 tsp garlic powder
* 120g penne pasta
* 1 chicken stock cube
* 100ml water
* 100ml double cream
* 1 tbsp tomato puree
* 50g grated cheddar cheese
* Fresh coriander, chopped
* Parmesan to finish

Instructions:
1. Put the pasta on to boil per packet instructions
2. In a large pan, heat the olive oil over medium-high heat. Sauté the onions and garlic until they start to soften, then add the peppers.
3. Mix all the seasoning together, add to the pan and stir thoroughly. Omit chilli if you’re serving to a child who doesn’t like spicy.
4. Once the peppers have started to soften, stir in the stock cube, water, cream, coriander and tomato puree.
5. Add the cheddar, a spoonful of pasta water along with the cooked pasta, stir until everything is well combined.
6. Finally stir through the cooked chicken, plate up and finish with grated Parmesan

Crispy Chicken Burger

This is one of my favourite meals to make, and this time I decided to elevate it by adding some sesame oil to the sriracha mayo, and some sushi ginger 🤩

Ingredients
* 2 burger buns
* 2 chicken breasts
* 1 tbsp flour
* 1 large egg, whisked
* 70g cornflakes, crushed
* 2 tbsp mayo
* 2 tbsp sriracha
* 1/2 tbsp sesame oil
* Lettuce
* Sliced gherkins
* Sushi ginger

Method
Flatten the chicken breasts between clingfilm with a rolling pin, coat in flour then dip in the egg, and coat in the cornflakes

Place in the air fryer for 12-15 mins at 180° until cooked

Meanwhile mix the mayo, sriracha and sesame oil and spread over the buns, add the lettuce, gherkins, ginger and chicken burger when cooked.

Beef Meatballs with Giant Couscous and Tomato Sauce

These beef meatballs, paired with wholesome giant couscous and a rich tomato sauce, create a delicious blend of flavors and textures. Let’s get cooking!

Ingredients:
400g lean beef mince
2 tsp dried oregano
1 tsp smoked paprika
1 tsp ground cumin
4 large ripe tomatoes
2 sticks celery, cut into chunks
1 clove garlic, thinly sliced
1 tbsp tomato puree
A dash of Worcester sauce
1 tbsp pure maple syrup
120g giant couscous
Olive oil
Juice of 1/2 lemon
A bunch of fresh coriander, chopped
2 tbsp plain yogurt
A bunch of fresh mint, chopped

Instructions:
Cook the giant couscous according to the package instructions. Once cooked, drain any excess water and stir in a drizzle of olive oil, lemon juice, and the chopped coriander. Set aside.

Meanwhile blanch and peel the tomatoes:
Place the tomatoes in a bowl and cover them with boiling water. Let them sit for a few minutes, then transfer them to cold water. The skins should easily peel off. Dice the peeled tomatoes.

Heat a saucepan over medium heat and add a splash of olive oil. Sauté the sliced garlic and celery until fragrant and slightly softened. Add the diced tomatoes, tomato puree, Worcester sauce, and maple syrup. Stir well. Simmer the sauce for about 10 minutes, allowing the flavors to meld. Use a hand blender to create a smooth sauce.

In a mixing bowl, combine the beef mince with the dried oregano, smoked paprika, and ground cumin. Mix thoroughly. Shape the mixture into even-sized meatballs. Arrange the meatballs in the air fryer basket and cook for 10-12 minutes, or until they are browned and cooked through.

Divide the prepared couscous between each plate. Top with the cooked meatballs. Drizzle the tomato sauce over the meatballs. Garnish with a dollop of yogurt and a sprinkle of chopped mint.

Chipotle chicken and cauliflower flatbreads 🌮

Ingredients
* 250g chicken breast, butterflied
* 2 tsp chipotle paste
* 200g cauliflower, sliced
* 1 clove garlic, finely chopped
* 120g yogurt
* 120g plain flour
* 1 chicken stock pot
* Small handful chopped coriander
* Olive oil

Method:
Mix the flour and yogurt together in a bowl, then use your hands to knead together before separating into 4 even balls. Dust a surface with flour and roll them out into thin flat breads.

Coat the chicken in 1 tsp chipotle, heat a little olive oil in a non stick pan and add the chicken, cook for around 5 minutes one side before turning and cooking on the other.

Meanwhile heat some oil in a separate non stick pan and fry the first flat bread, and brush the other side with oil. Allow to cook for about 4 minutes on one side before flipping, when bubbles start to form that’s usually when you want to flip. Repeat this with all 4 flatbreads.

When the chicken is cooked, shred it and add the garlic, cauliflower, remaining chipotle, chicken stock and a splash of water, then stir and allow it to cook through whilst you do the flat breads, finally stir through the coriander.

When all is cooked, plate up the flatbreads and fill with the chicken and cauliflower.

Coconut Lime Chicken with Spicy Peanut Sauce 🥜

This delightful chicken dish combines the tropical flavors of coconut and lime with a touch of heat from sriracha. It’s a quick and easy recipe that’s perfect for weeknight dinners or special occasions.

Ingredients
Marinade:
* 1 tbsp peanut butter
* 100ml coconut milk
* 1 tbsp soy sauce
* 1 tsp cumin
* 1 cloves garlic, finely chopped
* Zest of a lime
* Juice half a lime

Other ingredients:
* 2 chicken breasts, diced
* 100ml coconut milk
* 1 tbsp soy sauce
* 1 tbsp peanut butter
* 1-2 tbsp sriracha
* 1 tbsp maple syrup
* Juice half a lime
* Rice and broccoli to serve

Method:
Combine the marinade ingredients in a bowl, then add the diced chicken and leave for at least 20 minutes, the longer the better.

If serving with rice, now’s a good time to get it cooking.

When ready, add the chicken on to skewers then place in the air fryer at 180° for 10-12 minutes, or on the bbq if weather permits 😎

Whilst that’s cooking, tip the remaining marinade in a pan along with the additional ingredients, bring to boil then reduce to simmer and allow it to thicken.

When cooked, served up and pour the sauce over the skewers.

This 4 ingredient wrap combines delicious flavours for a simple yet satisfying lunch or light dinner that you can pull together in under 10 minutes!

Ingredients:
* 1 wrap
* 80 wilted spinach
* 6 sun dried tomatoes, chopped
* 1/2 ball mozzarella, sliced

1. Layer the wrap with the three ingredients, then fold into a wrap
2. Heat a pan on a medium heat and add the wrap, leave for 2-3 minutes before turning, checking it’s not burning, then cook on the other side for a further couple of minutes
3. Remove, slice and enjoy.

This delightful dish combines succulent honey soy-glazed chicken thighs with fluffy sushi rice. The sweet and savory flavors create a delicious balance, and there is plenty of texture too! This recipe is an easy crowd pleaser to try this weekend.

Ingredients:
* 4 chicken thighs
* 1 tbsp soy sauce
* 1 tbsp honey
* 1 garlic clove, minced
* 1 thumb ginger, grated
* 150g cooked sushi rice, cooked per packet instructions
* 1/4 carrots, cut into matchsticks
* 1/4 cucumber, ribboned
* 2 spring onions, sliced
* Toasted cashews, chopped
Sauce:
* 2 tbsp soy sauce
* 1 tbsp sriracha
* 1 tbsp honey
* Juice 1 lime

Instructions:
1. Marinate the chicken thighs the honey, soy sauce, minced garlic, and grated ginger. Let them soak up the flavors for at least 30 minutes.
2. Place the marinated chicken thighs in the air fryer basket. Cook for approximately 20 minutes at 180°, flipping halfway through, until they are crispy and golden.
3. Whilst the chicken is cooking, add the sauce ingredients into a pan and gently heat until it thickens
4. Roughly chop the chicken when cooked, then prepare the the bowls by layering rice, chicken carrots, cucumber, spring onions and cashews, finish by drizzling the sauce over the top.

Sticking with the chocolate theme today, here’s a bowl of cocoa porridge topped with some caramelised banana 🤩

Ingredients:
•50 porridge oats
•1 tbsp cocoa powder
•20g maple syrup
•200ml almond milk
•1/2 banana, sliced
•1 tsp honey
•small handful blueberries
•peanut butter

Put the oats, cocoa powder, maple syrup and almond milk in a pan and gently cook for around 5 minutes.
Heat the honey in a frying pan, then gently fry the banana for a few minutes each side, ensuring it doesn’t burn.
When cooked, spoon the porridge into a bowl, add the banana, some blueberries and drizzle on some peanut butter.

Chocolate orange overnight oats 🍫

Easter is just around the corner and I’m taking advantage of having chocolate for breakfast 😍 like I needed an excuse!

If you fancy making this you’ll need:
•50g oats
•10g chia seeds
•150ml almond milk
•juice of 1/2 an orange
•1 tbsp cocoa powder
•20g maple syrup
•zest of 1/2 and orange
•chocolate orange eggs to top

Put all ingredients apart from the eggs in a pot and leave overnight.
Add the eggs in the morning and tuck in!
