It’s exam season! Looking for “brain food”? Here’s one of our favourite recipes. Salmon provides lots of Omega-3 fatty acids which help to build brain cells, reduce inflammation, and enhance memory, together with vitamins B12 and D, plus lots of protein. The spinach, broccoli, and jacket potato all also provide various other vitamins and minerals, along with that all important fibre. We can’t guarantee success but at the very least, this will be a healthy and nutritious meal to feed the soul!

Ingredients (serves 4)
2 (130g) skinless salmon fillets
4 Bannisters Yorkshire Family Farm Baked Jacket Potatoes
25g spinach roughly chopped
100g tender stem broccoli, trimmed
1 tbsp olive oil
juice 1 lemon
2 tbsp half fat crème frâiche
salt and pepper to season

Method
Preheat the grill. Line a small baking tray with foil and place the salmon fillets in the middle. Brush with oil, add a squeeze of the lemon juice and season with salt and pepper. Cook under a medium grill for 6-8 mins or until the fish flakes easily. Cook the broccoli in a pan of boiling water for 4-5 mins or until just tender. Drain well then roughly chop. In a large bowl, mix the crème frâiche with the remaining lemon juice and salt and pepper to taste. Flake the salmon fillets lightly with a fork into large chunks, then gently fold into the creme fraiche with the broccoli and watercress. Serve spooned into the hot baked potatoes.

Look out for the Marine Stewardship Council’s MSC-certified tuna and the pole and line caught labelling – we can all make a difference, no matter how small it may seem!
