Ingredients
- Salmon, cubed
- Jasmine rice
- Edamame
- Cucumber, thinly sliced
- Carrot, julienned
- Pickled red cabbage
- Sriracha mayo, for serving
Teriyaki Sauce
- 120 ml soy sauce
- 2 tbsp rice vinegar
- ½ tbsp chili in oil
- 75 g brown sugar
- ½ tsp ground ginger
- 1 garlic clove, minced
- 2 tsp cornstarch + 2 tsp water, mixed into a slurry
Method
Add all sauce ingredients to a small saucepan over medium heat. Bring to a boil, stirring constantly, and cook for 1 minute. Allow to cool. Marinate the cubed salmon in ¼ of the teriyaki sauce for at least 20 minutes, or overnight for deeper flavour.
Assemble
Divide the cooked rice among bowls and top with teriyaki salmon, carrot, edamame, cucumber and pickled red cabbage. Drizzle with remaining teriyaki sauce and sriracha mayo.

Chocolate Cake
- 2 eggs
- 125g sugar
- 100 ml milk
- 80ml vegetable oil
- 20g butter, melted
- 125g flour
- 1 tsp baking soda
- 1½ tsp baking powder
- 20g cacao
- Pinch of salt
Method👩🏻🍳
Mix eggs and sugar until fluffy. Add oil and butter. Sift in dry ingredients and mix. Bake at 160°C for 20–25 min.
Choux Pastry
- 50g butter
- 100ml water
- 2 tsp sugar
- Pinch of salt
- 75g flour
- 2 eggs
Method👩🏻🍳
Melt butter, water, sugar and salt in a saucepan. Off the heat, add flour and stir fast. Return to medium heat, stir 1 min until smooth. Transfer to stand mixer, beat 2 min to cool. Add eggs one at a time until dough is thick and glossy. Pipe and bake at 160°C for 20–25 min until golden.
Cream Filling
- 400ml milk
- 90g sugar
- 50g cornstarch
- 10g flour
- 10g butter
- 5g vanillin
- 40g white chocolate
- 25ml cream
Method👩🏻🍳
Cook milk, sugar, starch and flour over medium heat, stirring constantly until thick. Off the heat, stir in butter, vanillin and chocolate. Cover with plastic wrap touching the surface, chill at least 3 hours. Fold in cream before using.
Chocolate Sauce:
- 120 g dark chocolate chips
- 90 g butter
Method👩🏻🍳
Melt the butter. Pour the hot butter over the chocolate. Mix well. Let it cool.
Assembly:
Set aside 10–15 choux puffs for later. Mix the remaining choux puffs with the cream filling. Pile onto chocolate cake base. Add the reserved choux puffs. Pour over chocolate sauce. Press crushed pistachios onto the sides.
