Εκτέλεση
1. Βάζεις στο βάζο:
* λεμόνια
* lime
* τζίντζερ
* σιτρονέλα (Λουίζα)
* δυόσμο
* αγαύη.
2. Με ένα muddler ή ξύλινο γουδοχέρι πιέζεις ελαφρά, όχι δυνατά. Στόχος είναι:
* να βγει ο χυμός από τα εσπεριδοειδή,
* να ανοίξει το τζίντζερ,
* να αρωματιστεί ο δυόσμος χωρίς να πικρίσει.
3. Προσθέτεις πάγο.
4. Γεμίζεις με ανθρακούχο νερό Zagori.
5. Ανακατεύεις καλά με μεγάλο κουτάλι.
6. Αφήνεις 3-5 λεπτά να “δέσουν” τα αρώματα πριν σερβίρεις & απολαμβάνεις!!

* 60 g banana shallot, thinly sliced
* 20 g unsalted butter
* 15 ml extra virgin olive oil
* 1 sprig fresh thyme
* 20 g vanilla wild honey
* 3–5 g black truffle paste or truffle oil
* 15 g toasted pine nuts
* Fleur de sel
* Freshly cracked black pepper
Grilled Sourdough
* 2 slices sourdough bread
* Extra virgin olive oil
* 1 garlic clove

Method
Truffle Honey
Gently combine the honey with the truffle paste (or truffle oil) until fully incorporated. Allow to infuse for 10–15 minutes.
Morels & Banana Shallot
1. Heat the butter and olive oil in a sauté pan over medium heat.
2. Add the finely chopped banana shallot and cook gently for 6–8 minutes until soft and lightly caramelized.
3. Add the morel mushrooms and sauté over medium-high heat for 2–3 minutes until lightly golden.
4. Season with thyme, fleur de sel, and freshly cracked black pepper.
5. Finish with a small knob of butter for a glossy finish.
Grilled Sourdough

* 250-300 ml νερό Zagori sparkling (για πιο αφράτο αποτέλεσμα)
* 1 μεγάλο ξερό κρεμμύδι, πολύ ψιλοκομμένο
* 4 φρέσκα κρεμμυδάκια, ψιλοκομμένα
* 1 ματσάκι μαϊντανό
* 1/2 ματσάκι άνηθο

* 1/2 ματσάκι καυκαλήθρες ή μυρώνια (προαιρετικά)

Εκτέλεση
1. Σε μπολ ανακατεύετε τη φαρίνα με το αλάτι και το πιπέρι.

3. Ρίχνετε όλα τα ψιλοκομμένα χόρτα και τα κρεμμύδια.
4. Ανακατεύετε καλά και αφήνετε το μείγμα να ξεκουραστεί 15-20 λεπτά.
5. Ζεσταίνετε το λάδι στους 170-180°C.
6. Παίρνετε κουταλιές από το μείγμα και τις ρίχνετε στο λάδι.
7. Τηγανίζετε 2-3 λεπτά από κάθε πλευρά μέχρι να χρυσίσουν.
