Ingredients:
Mutton/lamb leg 3 kgs almost
1/2 kg yogurt (preferably strained)
1/3 cup lemons juice
1 tbsp ginger garlic paste
1 tbsp each (salt, coriander, cumin, garam masala, black pepper)
2 tsp turmeric
1/2 tbsp red chilli powder
1/2 tbsp chilli flakes
3-4 tbsp oil
1 cup broth
Ghee for brushing over the cooked leg
For the Rice
2 tbsp ghee
1 onion chopped
4 garlic cloves chopped
1 tsp turmeric
1 tsp black pepper
2 cups basmati rice
2½ cups chicken or vegetable broth
For garnish:
2 carrots grated
1/2 cup raisins
5-6 tbsp ghee
Method:
Use a sharp knife to score deep cuts into your roast. Make your marinade by mixing all the ingredients together. Make sure to check for salt and spices before rubbing over the leg, flavor should be strong and slightly salty so it absorbs well. Rub the marinade all over your mutton and marinade for atleast 24 hours but 48-72 hours will be better. Remove the raan from the refrigerator an hour before cooking. Preheat oven at 180 and bake for 3.5 hours, you want to complete the wrap the mutton leg with oil and add remaining marinade plus broth in the baking tray. Flip halfway. After 3.5 hours your leg should be completely tender. Remove foil and bake for another 15 mins.
For the rice wash the rice thoroughly and soak for 30 minutes. In a large pan, heat ghee and sauté chopped onions and garlic for 3–4 minutes. Add turmeric and black pepper, then drained rice. Stir to coat.Add broth and bring to a boil. Taste and adjust salt if needed.Cover and reduce to low heat. Cook until most liquid is absorbed (about 15–20 minutes), then let it steam (dum) for 10–15 more minutes.
Sauté carrots and raisins in some ghee with honey until caramelised and softened for garnish. Serve everything and enjoy!

1 kg kaleji/liver (beef or mutton)
1 cup milk
1 cup water
2-3 garlic cloves with peel
For marinating:
2 tbsp vinegar
2 green chillies
2-3 red dried chillies
1 cube of ginger
2 garlic cloves
1 tbsp each cumin seeds & coriander seeds toasted
A few leaves of mint & coriander
1 tsp black pepper
For cooking:
2 tbsp oil
Marinated liver
2 tsp salt
1 tsp garam masala
1 tsp chilli flakes
1 tsp chaat masala
For garnish, ginger, chillies, coriander and lemon slices
Method:
Take liver pieces, soak in milk, water and garlic. Rub garlic all over the liver pieces, it hells get rid of any impurities and smell. Leave for 10-15 mins. In the meantime, toast cumin and coriander seeds. Add along with ginger, garlic, green chillies, red chilli, mint, coriander and grind everything. Wash and remove the upper translucent layer, it helps keep the liver soft. Cut in small cubes and marinate with grinded mixture and vinegar. Leave for 30 mins. Cook in oil on high heat for a few mins, cover for a few mins and let it cook. Remove cover and dry water. At this point when it’s cooked add salt, do not add salt before it hardens the liver. Also add chaat masala, garam masala and chilli flakes. Remove from heat, garnish and serve with roti or paratha this Eid!

Ingredients:
For the mutton marinade:
1 1/2 kg mutton
500 grams yogurt
1 tbsp ginger garlic paste
3 medium onions sliced and fried (save some for the dumplings layering later)
1 tbsp biryani masala
2 tsp each (coriander, cumin, red chilli, turmeric, salt and garam masala)
Whole garam masala
Chopped coriander, chillies and mint
3 tbsp ghee
For layering:
3 cups basmati rice boiled 70%
Fried onions
Sliced lemons
Chopped chillies, coriander and mint
Method:
Marinate the mutton with all ingredients for atleast 2 hours. Cook on low heat in a pan until soft and tender and around 80-90% cooked. Boil the soaked basmati rice until 70% cooked. Layer the biryani with mutton gravy, rice and garnishes. Cover and let it cook on low heat on dum for 10-15 mins. Remove cover, mix and enjoy!
