Siamo rientrati da poco dal nostro secondo viaggio in Giappone, alla scoperta dei sapori e dei segreti di quella che è, per i nostri valori, la pasticceria più interessante del mondo orientale, e abbiamo studiato le novità da proporvi! 🥰
✨️Per i giapponesi ogni pasto, ogni boccone -come tutto ciò che ci circonda, animato o no- ha una natura spirituale, ecco perché ogni dolce è realizzato con profondo rispetto della materia prima e massima cura dell'aspetto estetico. Per quanto piccoli o semplici, sono tutti finemente incartati come oggetti preziosissimi, e al tatto sono morbidosi, vellutati o irresistibilmente soffici.
I sapori e le consistenze sono molto diverse da quelle a cui siamo abituati, seppure in alcune zone del Giappone le influenze di altre culture hanno portato a interessanti contaminazioni.
Gli ingredienti tradizionali principali, rigorosamente vegetali, sono la farina di riso glutinoso, l'agar agar (addensante a base di alghe), la confettura di fagioli rossi dolci (anko) e il tè matcha, per una pasticceria meno dolce e più delicata, da gustare con rispetto e raccoglimento.
😋In particolare il tè matcha ha un sapore vellutato e stridente a cui bisogna educare il palato, ma appena si impara ad apprezzarlo diventa il competitor più temuto del cioccolato. Da noi troverete sempre la qualità premium, il top del matcha giapponese, che oltre ad essere una vera prelibatezza, fa benissimo alla salute: rinforza le difese immunitarie, è antinfiammatorio, depurativo, rilassante ed energizzante allo stesso tempo.
Anche la confettura di azuki (fagioli rossi), fatta come si deve, diventa un sapore irresistibile una volta compreso: poco zuccherino e molto nutriente, si sposa benissimo con vaniglia e cioccolato bianco.
Altre proposte che presenteremo nei prossimi giorni: mochi classici, mochi cremini, matcha tiramisù, matcha roll cake, biscotti ichimatsu serviti col matcha latte, matcha frappè e cioccolata calda, e naturalmente il nostro esclusivo sushi gelato, sempre presente in gelateria.
