Day 1 began in Edinburgh. The traveled to Drumlanrig, a grand 17th-century baroque castle in the Scottish Borders, home to the Douglas Clan. A tour, an art collection, lunch, then onward to our home at. Our first day ended with a dinner together and happy conversation.
Day 2 we explored the estate, learning the land before anything else. A morning session with guide set the week’s themes, followed by a long walk taking in Rigg Bay beach, the shoreline, and Garlieston conservation village, the historic seat of the Earls of Galloway. After lunch, a visit to the estate’s gardens and a tasting from Walled Garden Honey, whose seasonal honeys mirror what is flowering each season. The whisky welcome tasting with Nikki in the Stables was not to be missed.
Day 3 we headed to the Ethical Dairy, a low-intervention farm with animal welfare at its center, for a tour and cheese tasting with founder David Finlay. Lunch at The Murray Arms, then on to to meet artisan producer Rhuridh Hesketh, who makes jams and chutneys the slow, traditional way.
Day 4 was a wild food day. The morning began with a cordial-making lesson with, then out with forager to explore the shoreline and woodland habitats around the estate. There’s nothing like a seaside lunch with foraged sushi. It was a kind of day that changes how you look at a landscape.

Six weeks in Sicily with the farmers, beekeepers, pasta masters, shepherds, and foragers who know this soil, its seasons, and its people. You’ll learn to taste terroir, to trust what your own senses are telling you, and to carry that curiosity home into your own kitchen, market, and food system.
You’ll forage wild asparagus with Carmelo, spend a day in the field with a shepherd before you ever make cheese, and share long meals with Sicilian artisans and food experts who have spent generations in the practice of their craft. If you’re lucky, you may even witness a swarm of Sicilian Black Bees, a living lesson in what it means to protect a species, a landscape, and a way of life.
This is knowledge you can only find in person, in community, and with great curiosity. As we like to say, swallow the whole fish.
