I have lived many of electoral cycles in my time abroad. By now I am used to the rollercoaster of emotions, the visceral body reactions, the avalanche of information, the sleepless nights.
It’s been 25 years of torn families, immigration headlines, massacres, frustration. It’s felt deflating, demoralizing, and depressing. It’s felt like no matter what we do it’s just not enough and that the decades of protests and tears have not been enough. What does it take to get rid of the dictatorship that ripped us from our families and stole our collective dreams?
Over the years, sixteen to be exact, I learnt to time block and perform through the pain while I was building a new life. Some of that time I was apathetic, lost, angry. Today I am full of hope and believe this is the last season. It has to be.
Life has its ups and downs, people evolve, and after such a long time the Venezuelan people are unified under a common goal: to rescue our country.
I am reactivating this account to give visibility to the historic movement led by a fierce and educated woman, Maria Corina Machado
Today Venezuela has a new president and his name is Edmundo Gonzalez
Obviously no one is handing over the reins without kicking and screaming. Consider this my way of feeling useful, raising awareness, and externalizing to connect/process.

I am all about the leftovers after the holidays. Save this one for the morning after, it’s so easy and delicious.
👏🏻 INGREDIENTS FOR STUFFING
- 3 medium celery sticks chopped
- 1/2 medium yellow onion diced
- 1 small leek chopped (white part)
- 1 fennel bulb diced
- 2 diced apples
- 2 cups of dried/stalled bread cubes
- 3 tbs unsalted butter
- 1 cup turkey stock (or any stock)
- 1/3 cup heavy cream (optional)
- 1/2 cup fresh parsley
- 1/2 tbsp dry thyme
- 1/2 tbsp of dry Herbs de Provence
- 1 tbsp salt and pepper
- 1/2 lb of bacon
- 1/2 sunflower seeds
👏🏻 PREPARATION FOR STUFFING
- Get the bacon going on a cast iron until it’s 2/3 of the way cooked
- Sautéed onions, leeks, fennel, and celery in the bacon juices until they are translucent
- Add the apples, the rest of the bacon, spices and cook on low for a couple more minutes
- Transfer your mix into a bowl and let it cool down for about 10 mins
- Add the rest of the ingredients in such bowl and mix away. Get in with your hands and make sure the bread gets evenly coated with goodness
- Transfer your mix to an 8x8 baking pan and cover with foil. Refrigerate the night before totally optional
- Bake at 350 F for 45-60 min until it looks golden and the bread is toasty
👏🏻 NEXT DAY CAKES
- Mix your leftover stuffing with one egg and 1-2 tbs of all-purpose flour
- Roll them into small cakes and fry them over butter, about 5 min each side on medium heat
- Voila, enjoy with eggs bennies, as an appetizer, or even on top of a salad.

This year, like for many of you, was the hardest year of my life. Practicing daily gratitude has allowed to reframe my intention on focus on all the beautiful things I have going on, instead of the ones I “wish/want” or “am supposed” to have.

✨ I am grateful for the time I got to spend with the family and friends that are no longer with us
✨ I am grateful for mental health professionals, nurses and doctors, that are willing to put our needs before theirs to save lives
✨ I am grateful for essential workers that enable us to have a roof over our heads, running water, electricity, and food on our table
✨ I am grateful to live in 2020 with technology that allows us to connect with loved ones no matter where we are

Verán, Lalo y yo somos amigos desde el colegio, y desde que los dos salimos de Venezuela, hemos compartido tantas experiencias, vivencias, y desdichas que, como a muchos de nosotros en el exterior, nos unen el camino de la búsqueda de la felicidad lejos de casa.

Les cuento que en mi viaje a California estuvimos manejando entre Los Angeles y San Diego por varios días. Mientras estaba en la autopista, se me ocurrió llamar a mi amigo Lalo, mejor conocido en la farándula como y adivinen que!? Estábamos a tan solo 15 minutos de cruzarnos, después de haber pasado más de 4 años sin vernos en persona. De una decidimos encontramos en la bomba mas cercana para vernos.
Estoy convencida que el universo conspira para que este tipo de cosas lindas pasen, y no saben lo feliz que me dejo nuestra conversa.
Siento que no importa cuando tiempo pase, cada vez que nos sentamos a echarnos los cuentos, es como si no hubiese pasado ni un solo día.
Si les gusta la comida, los road trips, las reflexiones, y conversaciones a calzón quitao, con una pizca de sazón Venezolano, no dejen de seguirlo. Él es genuino, dulce, y único.
