white chocolate macadamia nut cookies to kick off my holiday baking adventures ❄️☃️🌺

went off of the recipe i found online by & it did NOT disappoint! i actually got white chocolate and macadamia nuts for baking this summer and realized i never got to baking anything with them yet. so today was the day and if you’re like me and love a simple ooey gooey, soft cookie recipe, add this recipe to your holiday baking to-do list!!!

ingredients:

• 2 cups + 2 tbsp flour
• 1 tsp cornstarch
• 1 tsp baking soda
• 1/2 tsp salt
• 3/4 cup unsalted butter, melted & cooled
• 3/4 cup packed brown sugar
• 3/4 cup granulated sugar
• 1 large egg + 1 egg yolk
• 1.5 tsp vanilla extract
• 1 cup roughly chopped macadamia nuts
• 1 heaping cup white chocolate

directions:

1. whisk flour, baking soda, salt & cornstarch together

2. in separate bowl, whisk butter, brown sugar, granulated sugar, eggs & vanilla extract together until combined

3. cover & chill dough - i chilled for about 2 hours

4. preheat oven to 350, line baking trays with parchment paper

5. roll cookies into balls & bake 12-13 mins or until lightly browned on the sides

6. devour + share with people you love 🥰 (unless they have a nut allergy. def bake something else for them…)

what should i bake next??

maturity is knowing you can have a race you’re disappointed in, but still learn & appreciate the experience for what it was anyways 💁🏼‍♀️

last night i got the opportunity to compete at a massive track meet, with the SPEEDIEST 5k girls in the ncaa. of course i knew my goals still wouldn’t put me anywhere near the front of a race there, but plan was to settle into a quick pace and get pulled into a fast time. i will always keep it real with you guys, and it didn’t go as planned.

the wins: i was at THE PENN RELAYS, racing under the lights. i realized i have the best support system in the whole world (friends, family, teammates, competitors, thank you)🤍despite wanting to drop out, i’m proud that i stuck it through and yk what, it was still a 1 second PR.

i also got to FINALLY reunite with an og foodstagram bestie of mine since 2019, the talented who also took these INCREDIBLE photos & videos. i watched smash a win in the 1500, running NCAA #6 time 🤯 then this girl doubled right back to pace the 10k later in the evening! and to add to it all, i got to race in the same heat as my NH summer running buddy as she smashed a PR of 16:34 🤩

the lesson: i had a tough 5k. a strong first half, with a toughhh second half. something i realized is that with my lack of history in the track 5k, i’m still learning how to run it, and run it smart. always being wrongly told the last 3 years that the 5k event just isn’t for me in track, transparently now i’m battling a bit of imposter syndrome sometimes in the event. while i can look back and be frustrated, i’m leaning more towards gratitude for the intelligent, honest, rational coaching i DO have now.

so here i am, living in the moment, embracing the good days AND the not so good. last week i ran a school record in the 3k. last night i ran a time in the 5k i’m disappointed with, 17:31, when i hadn’t even EVER broken 18:20 yet as of a month ago … so it truly is about perspective. now back to work & i’ll be back penn to cheer on my 4x800 teammates tomorrow!!!

this sport is crazy. and i’m here for it all🏃‍♀️⚡️
4:59.20 🥲

a moment i won’t forget, made sweeter by post-race hugs - first being with my teammate parker who accomplished just this at the same meet last year 🤍

it’s been a LONG road getting here, but anyone who’s been a part of this sport knows the struggle is what makes us even more addicted to chasing the success.

i wrote in my pre race journal, things are different this season. there’s a shift in who i am as a runner - not so much physically, but mentally.

this season i’ve been lucky to gain coaching that has instilled a sense of confidence and belief in myself that i didn’t even know existed. this season i learned how to race smart, i learned how to train smart, i learned how to trust a plan, and i’m having FUN.

college running is frustrating, it’s exhausting, and it’s completely non-linear. but this weekend hard work paid off after YEARS of working towards this goal. so to everyone else struggling to trust the process, keep working. things will come together if you believe. it only took me 3 1/2 years to finally achieve a sub 5 mile (and sub 10 3k), but i did it. now it’s back to work & time to pencil in some new goals!

long story short, to every single one of you reading this: don’t give up.

maac weekend dump: this sport is awesome edition 💕

after a weekend of hugs, cheering & a whole lotta fun w this team, i can’t put it into words how much i love this sport and the people in it. from giving life in the mile this weekend with my speedy teammates parker & sierra, toeing the line for a 3k double with my teammate kyra who also set a pr in the 5k, cheering everyone on in a weekend filled with records being shattered, to every girl i talked to from other teams too - this meet was about something bigger than anyone’s self.

shoutout chloe from siena who came back from surgery to fight for a comeback in the mile trials AND finals, jordan from rider who crushed the mile/3k double with ease, whose humor made the time leading up to the 3k double FUN, ava from merrimack who completed a mile-3k-4 x 800 triple, who i bonded with over the tired legs feeling pre-3k lol, and my new friend grace from sacred heart who had a crazy awesome 5k/3k performance (and welcome to our conference!)❤️‍🔥

even with those girls who aren’t teammates, this weekend showed me that this sport is a community unlike anything else i’ve ever been a part of. it’s special.

this weekend i grasped the true meaning of “it takes a village” because through the hard days to the great days, it really does. and i couldn’t be any prouder of the way the marist track & field village came together this weekend!!!

LAST INDOOR TRACK MAAC WEEKEND = DONE ☑️

enough of the sappiness - i’ll be taking some big naps today, moving minimally & i’m thrilled about it.
