Honestly, this is so quick, so crunchy and so delicious. Serves 3 to 4, depending on how much hubby eats lol.
Recipe below:
Crispy Rice
1 packet microwave white rice
3 tbsp soy sauce
Paprika, give it a good sprinkle
Chilli oil
A little olive oil
Chicken
Woolworths Classic Crumb Roasted Garlic Chicken Tenderloins
Salad
Lettuce
Shaved parmesan
Creamy Caesar dressing
You could absolutely make your own dressing, but I love the Beerenberg Creamy Parmesan Caesar Dressing. It’s not too heavy and tastes delicious.
Method
Preheat oven to 200°C and line a tray with baking paper.
Cook the microwave rice, pop it in a bowl and let it cool. Add soy sauce, paprika, chilli oil and olive oil, then mix well.
Spread the rice evenly on the tray and bake for around 35 minutes, stirring halfway through.
When the rice has about 15 minutes left, pop the chicken in the air fryer for 12 to 14 minutes, turning halfway.
Chop your lettuce, add the crispy rice, sliced chicken, shaved parmesan and Caesar dressing.
That’s it. Crunchy, easy, delicious and very hard not to go back for seconds.
