I wanted a little more flavor, so I made this high-protein fire roasted street corn to add on top. Takes 5 mins!
HIGH-PROTEIN FIRE-ROASTED STREET CORN 🌽
What you’ll need:
• 1 can fire-roasted corn
• 110g low-fat cottage cheese
• 1 tbsp light mayo
• 4 tbsp fresh cilantro
• ½ white onion
• Juice of ½–1 lime
• 2 tbsp mild salsa
• Tajín, to taste
• Trader Joe’s Everything But the Elote seasoning, to taste
Add your fire-roasted corn to a bowl.
In a small blender, add everything else and blend until smooth + creamy. Pour the sauce right over the corn, mix it up and serve cold! I had so much sauce I probably could have done 2 cans of corn but I just saved the extra sauce to use later.
You could use the creamy cilantro lime sauce on taco bowls, salads, chicken, ground beef or basically any meal-prep bowl that needs a little something extra.
