Time: Prep – 2 mins (plus 10-15 mins whisking cream into butter)
cook – 10-15mins
Homemade butter
Ingredients
600ml thickened cream
salt flakes to taste
Method
Place the cream into a mixer with a whisk attachment. Whisk until the cream is curdled and you can see the whey (liquid) has split away from the thick curds (if it’s splattering everywhere, you’ve done it!).
Strain, reserving the thick curds and rinse under cold water to remove any excess whey. Squeeze the curds together to remove any remaining whey.
Place into a bowl and add salt to taste.
Raspberry chia seed jam
Ingredients
2 cup frozen raspberries
2 tbsp chia seeds
2 tbsp lemon juice
2 tbsp honey
Method
Place the raspberries into a small saucepan and over medium-high heat. Stir until the fruit is heated through and begins to break down. Using a spoon, mash the fruit to the consistency you like, could be chunky or smooth.
Stir in the chia seeds and the lemon juice until combined. Taste and adjust with honey.
Remove from the heat and allow to cool for 5-10 mins. It will thicken as it cools.
Transfer to a jar.
To serve, spread the bread with a good slather of homemade butter and dollop on the jam.

I may be back to school runs and lunch boxes, but a part of me is still lingering somewhere between the sea cliffs of Taormina and the smoky slopes of Etna, see all my tips below.
We based ourselves in Taormina, the dreamiest clifftop town on Sicily’s east coast (more Taormina posts coming), and it was the perfect base for exploring Etna wines. Just over an hour away, Mt Etna’s volcanic landscape feels otherworldly, with vineyards planted into black lava terraces and some of the most exciting wines in Italy coming from this altitude.
We mixed long lunches with afternoons in tiny wine bars and winery stops, tasting as many Etna DOC wines as possible along the way. Nerello Mascalese, salty mineral whites, lava rock underfoot and plenty of snacks…this gal kicked off her Sicily tour, and there’s no such thing as “just one glass.”
~Where to eat 🍝🌿 Cave Ox (thanks I had the asparagus carbonara: ribbons of pappardelle with pork cheek and wild sage. Then charred chicken thigh with Etna oregano and rosemary. Smoky, herb-laced, absolutely perfect. Paired with Etna Bianco and Rosso and I nailed it. Friggin delicious, the only technical way to describe it… More Etna eats to come.
~Where to drink Etna wines 🍷🌋 : we rocked up without a booking (don’t recommend), they were fully booked but still squeezed us in and made us feel so welcome. The kind of hospitality that twisted my arm for a few bottles…
: ridiculous Mt Etna views while wandering the vineyard with a glass in hand, watching smoke curl from the volcano as the sun dipped and music kicked in. An unreal afternoon.
Il Buongustaio dell’Etna: a tiny enoteca and deli in Randazzo with an incredible local wine selection. (Again thanks for the reco). Relax out front in the Sicilian sun, order a charcuterie board, and settle in for hours. I did.
My only advice? Bring a very large bag for all the bottles you’ll convince yourself you need to take home.
