I studied English there, and now, 30 years after graduating, I am fulfilling my dream of publishing a cookbook in the United States.

1 cup frozen edamame
2 cloves garlic
1 tablespoon sesame oil
1/2 teaspoon chili flakes
1 tablespoon soy sauce
Forget greasy chipsāthis is my favorite healthy Japanese game-day snack for watching the World Cup. Fresh cabbage is chilled until extra crisp, then dipped into a bold garlic chive sauce made with smoking-hot sesame oil, soy sauce, vinegar, sesame seeds, and a touch of chili pepper.
Itās light, crunchy, refreshing, and full of flavorāthe perfect snack to enjoy while cheering for your team!
ingredients:
1/2 bunch of garlic chives (or spring onion)
2 tablespoons sesame oil
1 teaspoon sugar
1 teaspoon vinegar
1 tablespoon soy sauce
pinch of chili pepper

And every year, I lose the battle the moment I see ume at the grocery store. š
They are only in season for such a short time, so in Japan, this is the season when many of us get busy making syrups and preserves.
My favorite is Ume Sour.
Sweet, tangy, fragrant, and so refreshing. It is exactly what your body wants during Japanās hot and humid summer.
Ume Sour Base
2 lb (1 kg) Japanese green plums, or umeāØ10 oz (300 g) rock sugarāØ4 cups (960 ml) rice vinegar, or any vinegar of your choice
Let it sit until the sugar dissolves and the ume flavor infuses into the vinegar.
To serve, mix 1 tablespoon of the ume sour base with fizzy water.
So refreshing!
Instead of slicing, smashing the cucumbers creates rough edges that allow the savory garlic, ginger, and sesame soy sauce to cling to them and absorb instantly. Itās super crunchy, refreshing, and pure addiction! Perfect for hot summer days. š¤¤š»
