Throwback to our fun pop-up with years ago, where we served our lovely guests our delicious Goan Vonn (Vorne / Soji), garnished with cashew brittle in these cute little kulhads.

Vonn is the kind of dessert that doesn’t try hard to impress, but stays with you long after.
Born in the Catholic homes of Goa, it is traditionally prepared for weddings (Kazarachi Soji), feasts, and festive gatherings, quietly marking moments of celebration.
It's made with chana dal (notice the image's subheading? 🌝🙈), cashew nuts, and coconut milk, but it draws its gorgeous colour and smoky sweetness from coconut palm jaggery. A hint of cardamom and slow cooking give it a depth and texture like no other. That’s what makes our beloved Vonn rich yet comforting!
It isn’t flashy, nor does it demand attention, but stays firmly rooted in familiarity, comfort, and time.

Fiery, sharp, and unapologetically bold, our Prawn Balchão is anything but subtle.
This iconic side-dish (ideally a pickle) traces its roots to Portuguese trade routes, influenced by the Malaccan fermented shrimp condiment known as 'Belacan'.
What we eat today, however, is more about preservation, where vinegar, spice, and oil come together to create something that only deepens in flavour over time. The result is a heavily spiced, and unapologetically tangy preparation, with a hint of sweetness from coconut palm jaggery (no shortcuts, no mellowing it down).
The prawns are cooked just enough to retain their bite, then left to rest and absorb the spicy masala that stains everything it touches, in the best way possible.
It was, and still is, a preparation built for longevity in humid climates, long before refrigeration existed.
Balchão, to us, is a flavour bomb, because just a spoonful can carry an entire meal. It's best enjoyed with plain rice, alongside a mild curry and perhaps some fried fish.

DID YOU KNOW: Drawn at first light from the coconut inflorescence, the tree’s precious sap begins its journey in a state that is delicate, highly perishable, and already in transition, packed with the potential to become many things.
In Kerala, it is guided toward toddy fermentation just enough to leaven appams and kallappams, or consumed fresh while it is still sweet, and mildly effervescent. By noon, it finds its way into glasses at local kallu shaaps (toddy shops), quietly enjoyed with a side of “touchings” (chakna).
In Goa, the same sap underpins the fermentation that gives sannas their structure, lends coconut feni its character (though feni is more commonly distilled from cashew apple today), and produces vinegar with the sharpness that defines dishes like sorpotel and vindalho. It is also reduced into jaggery with dense, earthy caramel notes, an ingredient that adds immense depth to Goan preparations like atol, holle, pinagr (I can go on).
Today, with the steady decline of toddy tappers, this skilled and physically demanding craft is slowly fading, taking with it a body of knowledge that has long shaped regional foodways.

But imagine a single ingredient, handled differently, creates entirely distinct outcomes. What changes is not the source, but the intent, the timing, and the hand that guides it ❤️💛.

Fun fact: The coconut tree isn't the only source, but is preferred over the date palm toddy due to its availability and has a sweeter, milder flavour profile.
