“Taccole al Pomodoro” is a timeless Italian summer favourite: tender flat green beans gently cooked with sweet tomatoes, onion, garlic, basil and extra virgin olive oil. No fuss, just beautiful seasonal ingredients—and don’t forget a loaf of fresh crusty bread to mop up every drop of that irresistible tomato sauce.
Ingredients:
500 g taccole (flat green beans), trimmed
1 small onion, finely sliced
2 cloves garlic, sliced
400–500 g ripe tomatoes, chopped
1 handful of whole friarielli peppers
Extra virgin olive oil
A handful of fresh basil
Salt & freshly ground black pepper
Method:
Blanch the taccole in salted boiling water until just tender, then drain. Meanwhile, gently soften the onion in a generous drizzle of extra virgin olive oil. Add the garlic and cook for another minute, then add the whole friarielli peppers and sauté until they begin to soften. Stir in the chopped tomatoes with a pinch of salt and simmer for 10–15 minutes until they become a rich, rustic sauce. Fold in the taccole and cook everything together for a few more minutes so the beans absorb all the delicious flavours. Finish with fresh basil, black pepper, and a final drizzle of extra virgin olive oil.
Serve warm with plenty of fresh, crusty bread to soak up every last bit of that rich tomato sauce.

In Italy you don’t shop for a recipe; you find what’s beautiful that morning and let it decide dinner. Today it chose for me: basil and parsley still smelling of the garden, a soft head of lettuce, firm little zucchini, and the thing most people walk straight past, fiori di zucca, the golden courgette flowers.
Here’s what I’d make. The flowers, stuffed with ricotta and a whisper of lemon zest, dipped in the lightest batter and fried till they barely crackle. So delicious they’re likely to be eaten with your fingers, standing at the stove. The zucchini, sliced thin and turned in good oil with garlic and mint. The herbs torn (never chopped) over everything. The lettuce dressed simply, to catch whatever’s left on the plate.
That’s the whole secret of Mediterranean cooking in one basket: buy what’s in season, cook it simply, let the ingredient lead.

This is exactly how we decide dinner on the coast. You don’t plan the menu here; the sea does. You come down to the market, see what the boats brought in at dawn, and build the meal around it.
That’s the real secret of Mediterranean cooking, and it isn’t a recipe, it’s shopping. Eat with the seasons, buy what was caught that morning, cook it simply: good oil, a squeeze of lemon, something green from the garden. By the sea you follow the boats; inland you follow the soil. The ingredient leads, always.

I was born and raised in Termoli, a beautiful fishing town on Italy’s Adriatic coast — an undiscovered region in Italy that few people know about 🌊
Some of my earliest memories are of standing beside my Mamma and Nonna in the kitchen, fresh pasta dough on the table, sauces slowly simmering, and long family lunches filled with conversation and laughter.
It was there that I learned food is never just food.
It’s tradition, connection, generosity, and love.
My Nonna always believed that feeding people was one of life’s greatest acts of care ❤️
Before creating MammaLina, I spent years working in investment banking across Europe… a very different world from the one I grew up in 😅
But over time, I found myself returning to what always felt most natural, cooking, hosting, and bringing people together around the table.
I’ve called London home since 2002, yet I still cook exactly the way I was taught in Italy 🇮🇹
Today, MammaLina is my Italian Cookery School in East London, where I share the family recipes, traditions, and techniques passed down through generations ✨
