Per la Pastella:
• 150g di Farina di riso
• 75g di Amido di mais
• 280ml - 300ml di Acqua Santa Croce frizzante (rigorosamente ghiacciata)
• 1 cucchiaio di Bicarbonato
• 1 cucchiaio abbondante di Paprica
Per completare la panatura:
• 70-80g di Farina di riso (in una ciotolina per la prima passata a secco)
• 150g di Panko o Pangrattato grosso
💡 Consigli per non sbagliare:
1. L’ordine è tutto: Prima passa il gambero nella farina di riso a secco (serve a “asciugare” la superficie e far aderire il resto), poi tuffalo nella pastella e infine rotolalo nel Panko.
2. Il termometro Assicurati che l’olio resti sempre tra i 175°C e i 180°C. Se scende troppo, il Panko assorbirà olio e addio fritto asciutto!
3. Il sale: Non metterlo mai nella pastella! Il sale richiama umidità. Mettilo solo sui gamberi appena usciti dall’olio, quando sono ancora bollenti.
