Ingredients:
Unakkalari (raw red Kerala rice) โ 1/4 cup
Full-fat milk โ 1.5 liters (about 6 cups)
Sugar โ ยพ to 1 cup (adjust to taste)
1. Wash the rice and keep it aside.
2. In a heavy-bottomed vessel or uruli, pour the milk and bring it to a boil.
3. Add the washed unakkalari rice to the milk Cook partially on low heat.
Keep the heat on medium-low and stir frequently to avoid burning at the bottom.
5. Continue simmering for 1.5 to 2 hours, stirring often, until the milk reduces and thickens and the rice is fully cooked. The color will change to a light pinkish hue.
6. Add sugar and stir until completely dissolved. Continue cooking for another 15โ20 minutes, stirring regularly.
7. The payasam is ready when it reaches a thick, creamy consistency.

เดชเดเตเดเดฐเดฟ/raw rice 1 cup
เดเตเดฑเต/cooked rice 1/2cup
เดฎเตเดฆ/maida 1/4cup
เดชเดเตเดเดธเดพเดฐ /sugar 1/2 cup
เดเดฒเดเตเด/ Cardamom 2 nos
เดเดชเตเดชเต /salt a pinch
เดฏเตเดธเตเดฑเตเดฑเต/ yeast(1/4 tspn)

Soak rice for about 4 hrs.
In a blender add rice,maida,cooked rice,sugar,cardamom,yeast and water and smooth batter. Keep it aside for fermentation (5to6 hrs )
Add a pinch of salt to the Fermented Batter and mix well..
Heat oil in a paniyaram pan.
Fill the each mould with batter (3/4th) immediately flip to the other side..
Cook untill the lower side Turns to golden colour. Serve with tea โค๏ธ
*Shelf life two to three days only..

Ingredients

Rice flour 1/2 cup( for roasted rice flour use normal water,for unroasted rice flour,add boiling water and make the dough)
Milk 3cup
Sugar 1/4cup
Cardamom powder 1/2tspn
Ghee 1 tspn
In a mixing bowl add rice flour, ghee,salt,water n make a smooth dough..
Make smooth balls out of it or you can make it in any shape and keep it aside.
Boil milk in a pan, add Cardamom powder and sugar.
Now gently add the dumplings in the milk..DO NOT stir..
Let it cook for 10 to 15 mins.
You can use condensed milk too..
Turn of the stove and serve hot or cold.
