INGREDIENTS
Pho spices
• 2 star anise
• 1 cinnamon stick
• 1 tbsp coriander seeds
• 1 tbsp white peppercorn
Broth
• 2 yellow onions, peeled (optional to keep skin on — just wash well)
• 1 knob ginger, peeled
• 1 free-range whole chicken
• 1 tbsp salt (more or less to preference)
• 2 tbsp fish sauce
• 2 tbsp chicken bouillon (optional)
For serving
• Pho noodles
• Green onion
• Bean sprouts
• Thai Basil
• Chopped cilantro
• Thinly sliced red onion
• Sriracha
• Hoisin sauce
• Chili
• Lime

STEPS
1. Rub chicken with salt, then rinse well.
(This helps remove impurities and keeps the broth clean.)
2. Place chicken in a large pot of boiling water.
Boil for 30 minutes total, turning the chicken after 15 minutes so each side cooks evenly.
3. Char aromatics & toast spices
While the chicken is boiling:
• Char onion and ginger
• Toast coriander seeds, white peppercorn, cinnamon stick, and star anise
4. Once onions, ginger, and spices are ready, add them to the pot. (I used a spice bag.)
5. Important step!! Remove the chicken so it doesn’t overcook and stays juicy.
6. Shred the cooked chicken meat and set aside.
Return the bones to the pot and simmer for another 1 hour to deepen the broth flavor.
7. Remove everything from the pot. Season the broth with chicken bouillon, fish sauce, and salt to your preference. You can start with one tablespoon and adjust to taste.
❤️ For baby: I made her unseasoned shredded chicken,
pho noodles mixed with 1 cube of whipped bone marrow,
and boiled broccoli. She loved it!!
Total cooking time: ~1.5 hour

Ingredients
• Beef back ribs
• 1 large onion
• 5 green onion stalks
• Handful of ginger
• 6–7 garlic cloves
• Handful of whole black peppercorns
• 1 small Korean radish (mu)
• 8 cups water (enough to cover ribs)
• 2 tbsp soup soy sauce (add more if you like it saltier)
• Salt & pepper (to taste)

Steps:
1. Soak ribs in cold water at least 1 hour (overnight is best), then rinse. I soaked mine for 3 hours.
2. Add ribs, onion, green onions, ginger, garlic & peppercorns to the Instant Pot.
3. Pour in water until ribs are covered. Cook on HIGH pressure for 30 minutes.
4. Peel and cut Korean radish into large chunks.
5. Natural release 15 minutes, then quick release.
6. Remove the onion (I keep everything else in for extra flavor)
7. Set to SAUTÉ for 15 minutes — add radish, soup soy sauce, salt & pepper to taste.
8. Serve with rice or Korean glass noodles and enjoy 🤍
✨ Add more chopped green onion on top if you like.

💡 Toddler/ Baby tip:
Before adding any salt, I take out some ribs + broth for my 13-month-old. The soup soy sauce already contains salt. if you prefer no added salt at all, simply remove the ribs and broth before adding any seasonings.
