Ingredients
500 grams okra (bhindi)
2 onions, chopped
2–3 tbsp oil
1 tsp cumin seeds
Spices
1 tsp red chili powder
1 tsp Kashmiri red chili powder
2 tsp coriander powder
½ tsp dry mango powder (amchur)
Salt to taste
Method
Cut the okra into large pieces and shallow fry until lightly crisp.
In a bowl, mix all the spices together.
Heat oil in a pan, add cumin seeds and sliced onions, and sauté until golden.
Add the fried okra and mix well.
Now add the prepared spice mix, toss everything together, and cook for 3–4 minutes.
Serve hot with roti or paratha. 😋
