Ingredients
• Sichuan peppercorns – 1/3 cup + 1 tsp (for garnish)
• Dried chili peppers – 1/2 cup + 8–10 pieces (for garnish)
• Cinnamon sticks – 2 sticks
• Bay leaves – 4 leaves
• Star anise – 2 pods
• Cumin seeds – 1 tsp
• Fennel seeds – 1 tsp
• Cloves – 1/2 tsp
• Neutral cooking oil – 3 cups
• Garlic – 6 cloves
• Ginger – 1 tsp
• Green onions – 5 stalks
• Doubanjiang (spicy fermented bean paste) – 1/2 cup
• Fermented black beans (paste or sauce) – 3 tbsp
• White sugar – 1 tsp
• Shaoxing wine – 1 tbsp
• Chicken bouillon – 3 tbsp

Instructions
1. Blend dried chili peppers, Sichuan peppercorns, cumin seeds, cloves, fennel seeds, star anise, bay leaves, and cinnamon sticks into small flakes (not a powder).
2. Heat oil over low heat until gently hot—garlic should softly sizzle, not brown.
3. Add garlic, ginger, and green onions. Cook about 2 minutes until fragrant.
4. Stir in doubanjiang and fermented black beans. Cook for 1 minute.
5. Add blended spices and cook for about 10 minutes, stirring often, until the oil turns bright orange-red.
6. Stir in sugar, Shaoxing wine, and chicken bouillon until fully dissolved.
7. Remove from heat and let cool for 10–20 minutes.
8. Pour into a heatproof container, top with whole dried chilies and crushed peppercorns, cover, and freeze overnight.
9. Once frozen, cut into 4 pieces and store in zip-top bags for up to 6 months.
🔥 To use: Add 1 piece of soup base to 4–5 cups of water or chicken broth. Bring to a boil, stir to dissolve, and start cooking your hot pot favorites!

Ingredients
• Strawberries – 1 pack
• Bananas – 2 fruits
• White sugar – 2 cups
• Water – 1 cup
• Black sesame seeds – 1/4 tsp

Instructions
1. Cut off about 1/3 of each strawberry to create Santa’s “hat.”
2. Assemble the skewer: strawberry base, a slice of banana, then the strawberry hat. Use black sesame seeds to make Santa’s eyes.
3. In a small pot, combine sugar and water over medium heat. Stir until sugar dissolves, then stop stirring and simmer for 10–15 minutes until golden.
4. Test the syrup by dipping a chopstick into the syrup, then into ice water. If it hardens and crunches, it’s ready.
5. Turn off heat. Dip the fruit skewers into the syrup, then immediately into ice water.
6. Place on a plate and let set for about 3 minutes until the sugar hardens completely.
7. Enjoy once fully cooled and crunchy!

Here’s the fruits and jellies that I used:
1 can longan
1 can jackfruit with toddy palm seeds
2 jars Nata de coco jellies
2 cans coconut milk
3 tbsp condensed milk
2 cans of water chestnut
To make the rubies:
Cut the water chestnuts into small cubes. Add food coloring, I used red and a pandan extract for the green. Coat generously with tapioca starch then sift to remove the excess. Boil 3 cups water and cook until they float to the top. Soak in ice bath for 5 minutes then strain.
Add all your fruits and jellies (without the syrup, except for 1 can or jar) to a large bowl with the rubies, coconut milk and condensed milk. Mix and chill for an hour. Serve with crushed ice.
