Beef And Black Bean Sauce 🇬🇾 🇨🇳

Every once in a while, you come across something that just blows your mind. This fusion Guyanese twist on a Chinese classic is one those things. The balance of the different flavour profiles come together just beautifully. If you can come across some Wiri Wiri Pepper use that, I couldn't find it so I used a green chilli.

Beef marinade

1 pound thinly sliced beef
2 tbsp soy sauce
2 tbsp Chinese Shaoxing Wine
1/2 tsp baking soda
4.5 tsp corn flour starch

Black Bean Sauce

10 cloves of minced garlic
1 tbsp chopped ginger
1 cup salted fermented black beans
3 tbsp Chinese shaoxing wine
2 tbsp light soy sauce
2 tbsp sugar
1.5 tsp corn starch flurry

Dish Ingredients

1 onion, sliced
1 large stalk celery chopped
3/4 cup oyster sauce
3 spring onions roughly chopped
Julienned carrots

Step 1:

Combine all the beef marinade ingredients together. Allow to marinate at least 1 hour

Step 2:
Black Bean Sauce. Add oil to a hot wok. Add in ginger and garlic. Cook for a few minutes. Now add in in your Black beans. Cook for a few minutes. Add one cup of water, Chinese shaoxing wine, soy sauce, and sugar. Allow to cook until most of the water evaporates. Now mix your corn starch with 2 tbsp of water, and add it in to the sauce. Mix. Your sauce should be thick and ready now. Set aside.

Step 3:

Add oil to a hot wok. Add in your beef. Cook until both sides are evenly seared. Now add in chopped onions. Cook for a few minutes. Now add in your celery. Cook for 2 minutes. Now add in 3 tbsp of the black bean paste we made earlier, as well as oyster sauce. Cook and mix evenly. Now add in the green onions and carrots. Cook for a few minutes.

Done!

I served this with Noodles and fried rice, and garnished the final dish with sesame seeds.

Spicy Green Chutney Recipe.

Add a kick to all your dishes with this fresh Chutney

Make it, try it, and let me know!.5 Medium Onion
2 Medium Sized Tomatoes
1 tsp lemon Juice
Salt to taste. I used.5 top
40 grams of Cilantro
2 Pakistani Green Chillies
.5 tsp of Sugar
1 Garlic Clove

Roughly chop up both tomatoes and onion. In a blender add in all ingredients. Blend until smooth. If you want a smoother chutney add some olive oil into the blender.

Loaded Baked Potato Soup ⬇️⬇️

This is absolutely one of my favorite soups! In my opinion it's the epitome of comfort food in soup form. Super rich, creamy, and hearty. In fact, you'll probably have to take a nap after eating this. Make this, trust me!

Ingredients:

1 medium diced onion
2 pounds Yukon Gold Potatoes ( skin off )
Salt to taste
1.5 tsp black pepper
1 tsp red chilli powder
6 strips of bacon ( chopped )
3 tbsp Butter
Chives
4 cups of chicken broth
2 cups of milk
2/3 cup of cream
3 cloves of Garlic ( chopped )
2/3 cup of flour

Step 1:

In a pot add oil, on medium heat. Now add in your chopped bacon. Cook until crispy. Empty baconout with a slotted spoon. Now add in your butter, and onions. Cook until the onions are translucent ( about 5 minutes ).

Step 2:

Now add in your garlic, and cook for another 1 minute, constantly mixing. Now add in your flour. Mix until the consistency is smooth. Now add in your chopped potatoes, as well as all the liquids ( chicken broth, milk, cream ). Also add in your spices ( salt, black pepper, chilli powder ). Bring to a boil, stirring occasionally.

Step 3:

Now lower the heat to a simmer, for the next 30-35 minutes, occasionally stirring. Now add in your sour cream, as well as the bacon you cooked earlier on. Simmer for another 10-15 mins.

Done!

Garnish your soup with sour cream, bacon bits, and cheddar cheese. Enjoy!

Pepper Shrimp Recipe ⬇️⬇️
🌶 🍤

Let's take a trip down to the Caribbean with one of my favorite dishes. PEPPER SHRIMP! This dish has it all. It's spicy, crunchy, and packed with flavor. I recommend using large Shrimp, I used medium sized Shrimp, cause that's all I could get my hands on. Warning: this dish is a little spicy, if you can't handle the heat, then this isn't for you.

Enjoy!

Ingredients:

1 pound Large Shrimp
1/2 tsp salt or to taste
1/2 tsp fresh black pepper
1 tbsp corn starch
1 scotch Bonnet Pepper ( 2 if you're feeling frisky)
Scallions ( green onions )
4 cloves of chopped garlic

Step 1:

Clean your shrimp with water and vinegar. Make sure the shell is off and they are deveined. Now make sure the Shrimp are as dry as possible before we start seasoning.

Step 2:

In a medium sized bowl add your shrimp. Add salt, pepper, and corn starch. Mix thoroughly, and coat the Shrimp evenly. Let rest for a few minutes.

Step 3:
In a large pot add vegetable oil. Keep it on medium high heat. Make sure the oil is hot. Now individually add your shrimp peices. Fry them for no longer then a minute. You do not want to over cook the shrimp. Once all shrimp are fried... set aside.

Step 4:

In a separate cooking pan, heat some oil up. Keep the flame low. Add in your garlic, Scallions, and scotch Bonnet. We want to lightly fry them. Cook for 2 to 3 minutes. Now add in your fried shrimp, and cook for another minute or 2.

Done!

Giant Chappli Kebab Recipe ⬇️⬇️⬇️

I decided to have a little fun with this recipe, and thought I should make a big ass flat Chappli Kebab, so I did lol. Don't be stupid like me and do it lol. It ended up being a little science project for me, as I had to figure out the logistics, such as figuring out to place the Giant Kebab in the pot without breaking it, or how to flip the Giant Kebab without breaking it etc etc. If you do want the tips and tricks send me a dm and I'll share how I did it.

Anyways. Here's the recipe!

2 pounds of Ground Beef
1.5 tsp of Salt ( salt to taste )
2 tsp Crushed Red Chillies
1 tsp Ground Cumin
2 tbsp of half Grinded Coriander
1 tbsp of Ginger and Garlic ( Finely Chopped)
1 tsp Garam Masala
1 Egg
4 small and 2 big Green Chillies ( Finely Chopped )
2 small Onions ( Chopped, diced )
1 medium Tomato ( Chopped )
1.5 tsp Anar Dana

Step 1-

Chop all the ingredients I have listed above that have chopped beside them. In a large bowl. Put all the ingredients together and mix thoroughly. Once mixed, allow to marinate for at least 2 hours if you can marinate over night- even better! Place in the fridge to marinate
Step 2-

Grab a handful of meat and shape them in a patty form. Try to make them as thin as possible. While forming the shape, try to get rid of all air pockets in the kebabs. This will help to keep the form of the kebab when you fry them.

Step 3-

Once the patty shape is formed, it's time to fry the kebabs. Depending on how thick you made the patty, the cooking time can vary. I cooked mine for about 3-5 minutes each side.

Place the finished kebabs on a paper towel to get rid of the excess oil.

DONE!! I ate my kebabs with rice and a home made garden salad. Garnished with green Chillies, coriander, onions, and paprika.

Beef Short Ribs Recipe 👇

It's not quite BBQ season in Toronto, but we almost there! I made these ribs in the oven but was still able to capture that coveted, smoky flavor we crave from our favorite BBQ goods. Here's the SECRET.... Cayenne Pepper! These ribs will make you feel like you're eating a $50-70 plate at a high-end smoke house. You're welcome 😊 😃

Ingredients:

Short Ribs ( have You're Butcher take off the silver skin, it can be pretty tough sometimes to take it off yourself).

Salt ( to taste ) be generous. There's a lot of meat on short ribs

Black pepper 1.5 tsp
Onion powder 1.5 tsp
Garlic flakes 1.5 tsp
Brown Sugar 1 tsp
Cayenne pepper 1.5 tsp
Red chili Powder ( optional, if you like spice ) 1 tsp
Worcestershire

Your favorite BBQ sauce.

Step 1:

Mix all your dry ingredients together. This will be the rub for your ribs. First, you want to lightly coat your ribs with Worcestershire. This will act as a bind, and make sure your rub sticks to your ribs, locking in all that flavor. Now go ahead and evenly coat your ribs with the rub we made earlier on. Front, back, sides, top, bottom, cover every inch. I left to marinate overnight to maximize flavor.

Step 2:

Wrap your ribs in aluminum foil and place them in a baking dish. If you have a rack, I would recommend using the rack. Juice will secrete, while we slow cook the ribs. If you don't, no big deal, you'll just have a little mess to clean later on.

Step 3:

Place the ribs in the oven at 300 degrees for 3-3.5 hours.

Step 4:

Take ribs out of the oven. Be careful while unwrapping the aluminum foil. The ribs will be hot. Slather your favorite BBQ sauce evenly over the ribs. Now place your ribs back into the oven for another 15 minutes to BROIL, not bake.

Done!

Once you take your ribs out of the oven, allow them to rest for 10-15 minutes before enjoying.

Gourmet Mac'n Cheese Recipe⬇️⬇️

Growing up I always loved KD's macaroni and cheese. I still do! I've created a macaroni and Cheese for adults that just slaps! This recipe is gooey, cheesy, chrispy, and delicious. MAC'N CHEESE is for adults too! Lol

Enjoy!

Ingredients:

120 grams sharp cheddar
90 grams Mozzarella
80 grams gruyere cheese
Elbow Macaroni 400 grams
4 tbsp Butter
Salt
Pepper
Chilli Powder
Mustard
Bread Crumbs
4 cups Milk
1 cup Half and Half
Flour

Step 1:

Start by individually grating all 3 of the cheeses. This part is annoying and tedious, but oh so necessary. Put them all together in a bowl and mix. In a pot, melt 4 tbsp of butter. Once melted, add in 4 tsp of flour. Whisk until smooth, about 1-2 minutes.

Step 2:

Add in your milk, and continue to Whisk for another minute, until smooth. Now add in your Half and half. Whisk, Whisk, Whisk, until smooth. Add in salt, pepper, chilli powder. Whisk, Whisk Whisk, until smooth. Add in a third of the cheese mix. Whisk, until the cheese melts, and now add in the other third. Whisk until smooth. Turn off the heat.

Step 3:

Boil your elbow macaroni. Follow the pack instructions. We don't want to over cook the macaroni, we want it el dente, slightly chewy.

Step 4:

Mix the pasta in the cheese mix, and mix thoroughly. Grease a baking tray with butter, ( cast iron works too, i used one!)
Now evenly spread the macaroni and cheese. Use the last third of the cheese mix to throw on top of the Mac and cheese. Grab a hand full of bread Crumbs and evenly distribute it on the Mac and cheese.

Step 5:

Place in your oven at 350 for 10 minutes.

Chicken Shawarma on the Rocks ⬇️⬇️
**New Recipe Alert**

Yooo.... this Recipe is the truth! Who doesn't like chicken shawarmas!? I can't say I've ever met anyone who doesn't. I made this with rice rather then the traditional pita. Since I made this at home, and like most people, I don't have a spit, but broiling it gives you that similar crisp effect. Enjoy

Chicken Ingredients:

2 Chicken Breasts (cut very thin) you can use chicken thighs as well, I just prefer white meat.
8 cloves minced garlic
1/2 tsp cardomom powder
1 tbsp coriander powder
1tbsp cayenne pepper
1 tbsp smoked paprika
1 tbsp cumin powder
2 tbsp lemon juice
3 tbsp Olive oil
Salt to taste
Black pepper to taste
1 tsp sumac

Combine all ingredients together. Mix well. Marinate for at least 1 hour. I Marinated this over night though.

Garlic Sauce

1/2 cup of yogurt
4 cloves minced garlic
1 tsp cumin powder
Juice 1/2 lemon.
Salt

Mix well

Cover your baking tray with aluminum foil, and grease it with olive oil. Now add your Marinated chicken. Spread the chicken out evenly. Set your oven to broil on high. Place your chicken on the top rack, and let it broil for 10-12 minutes. Take your chicken out, turn all the peices over, and place back into the oven to broil on low for about 2 more minutes.

Your chicken shawarma should be done now. I cut my chicken into little peices, you may do this if you wish as well.

Done!

Serve this over rice, complimented with chopped tomatoes, cucumber, and onions.
